Recipe for Quinoa Stuffed Peppadews

When trying to make healthy changes to your diet it is easy to become overwhelmed.  Let’s face it – many of us were brought up with the idea that if food was healthy then in must taste bad.  As a child I can remember my mom going off to Weight Watchers meetings wondering if all of her deprivation was going to pay off.

Fortunately, most of us know better now.  Healthy food can be exceptionally delicious as long as a little care goes into the planning!  I really love eating healthy, and today I thought I would share with you a favorite quinoa recipe that really shows you that healthy and delicious can go hand in hand.

Now if you’ve never heard of quinoa before, you may be wondering just what it is and why it is considered such a healthy food.  Quinoa is a seed that is grown in certain portions of South America.  Although it has been cultivated for over 5,000 years, it has only been in the last decade that you could find it in other parts of the world.  Today, many grocery stores stock quinoa and it is also readily available in health food stores such as Whole Foods.

Here is one of my favorite quinoa recipes of all time. I love it because it is unique, simple and delicious.  Peppadews, for those who don’t know, are sweet and spicy piquante peppers that make elegantly simple appetizers.  Add in some quinoa and you have a healthy but oh so delicious dish.

Quinoa Stuffed Peppadews

1 bunch fresh mint

12 Peppadews, drained and rinsed

¼ cup cooked quinoa

¼ cucumber, peeled, seeded and diced fine

1 ounce feta cheese, crumbled

Directions

Place a mint leaf in the cavity of each peppadew.  In a small bowl combine quinoa, cucumber and feta.  Place filling in the peppadew cavities and refrigerate until ready to serve. Enjoy!
